The optional MonoSfoglia Ravioli Attachment allows the SousChef to produce the most handmade looking ravioli, crafted from a single sheet of pasta.

The SousChef is the latest from Emiliomiti and La Monferrina and has many features and technologies to make it the ultimate restaurant pasta extruder. SousChef features a fully removable hopper, extrusion head, and mixing components that disassemble easily without tools for a speedy cleanup. Utilizing inverter drive technology, SousChef can produce up to 20lbs of fresh pasta per hour from a standard 110volt outlet, reducing the physical limitations of placement in your kitchen.
When paired with the optional MonoSfoglia Ravioli Attachment, SousChef is capable of producing the most handmade looking ravioli, made from a single of sheet of pasta just like when making it by hand. MonoSfoglia allows for the automatic production of ravioli shapes such as Mezzaluna and Plin.
